Why are there strange stroke lines that makes my text appear bold or thin on my proofs?

What you see is a called trapping. Trapping is the process of overlapping adjacent colors over the other to compensate for registration errors and a smooth transition between colors. The area of overlap is extremely small and will NOT BE VISIBLE ON THE FINAL PRINT. Trapping is necessary for commercial printing. On your PDF display program, these trap areas will make vector objects and text appear bold, or thinned. Please see the image example below.
